All music is only effective while the tune is playing (with the exception of Trumpet 1 and Violin 1), and it affects the entire party.

Cembalo 1: "The Ghost Dance" - increases HIT.
Cembalo 2: "The Fairy Dance" - increases AVD.
Harmonica 1: "The Strains of Battle" - increases enemy encounter rate.
Harmonica 2: "Strains of Loneliness" - decreases enemy encounter rate.
Lyre 1: "The Judgement" [sic] - increases ATK.
Lyre 2: "The Eternal Song" - increases DEF.
Organ 1: "The Song of Healing" - walking around restores HP.
Organ 2: "The Song of Hope" - walking around restores MP.
Piano 1: "The Song of Salvation" - walking around restores HP and MP (at a lower rate than Organ songs)
Piano 2: "The Song of Blessings" - increases all parameters (at a lower strength than Lyre/Cembalo/Shamisen songs)
Shamisen 1: "The Green Gale" - increases AGL.
Shamisen 2: "The Secret Power" - raises max HP and MP.
Trumpet 1: "The Evil Melody" - as soon as you exit the menu screen, you will start a boss fight. Depending on your Musical Talent skill level, the enemy you fight will be different. Here's the rundown (thanks to Rena for this tip).
