The letters on the map represent the following:

H - House
S - Secret Passage (must hit base of the pillar)
M - Monolith of the Sun (summons Pegasus)
T - Trojan Pitcher (must hit the base of the pillar)
C - Second Cyclops
P - Poseidon's Temple (you can buy the Ocarina here)
F - Fountain room
E - Back to the beginning of the area (door to Peloponessus)
